Easy Fruit Cobbler

1 cup all-purpose flour
2 teaspoons baking powder
3/4 cup white sugar
3/4 cup milk
1/4 cup butter
2 cups sliced fresh peaches

Preheat oven to 325 degrees F (165 degrees C). Melt butter in a 9 x 9 inch baking dish. Blend together flour, baking powder, sugar, and milk. Pour batter in baking dish over the butter. Pour fruit in middle of batter, and do not stir. Bake for 1 hour.

Dr Pepper Cake

1 (18 ounce) box yellow cake mix
1 (3 ounce) box instant vanilla pudding
1 (12 ounce) can warm Dr. Pepper cola, divided
4 eggs
3/4 cup oil or butter
chopped pecans (optional)

Mix all ingredients well reserving 3 tablespoons of Dr Pepper for the glaze (recipe below). Pour into a prepared bundt cake pan. Bake at 350 for 50 minutes or until toothpick comes out clean.

Glaze:
1 cup of powdered sugar
1/4 teaspoon vanilla
3 T Dr. Pepper

Mix all ingredients well. Drizzle over warm cake.

Serve warm or cooled to room temperature.

Spare Ribs

This is my grand kids favorite and they always want grandma to make spare ribs when they come over for dinner

1 rack of ribs per person
Garlic Powder
Diana's Rib Sauce
2 large onions

In a very large stock pot add ribs, cover with cold water, add 2 onions sliced and 2 tablespoons of garlic powder. Bring to a boil, cook for 20 mins. Remove ribs and rinse off, discard water and onions.

Pre heat over to 350. Place ribs on a large baking sheet and pour Diana's rib sauce over the ribs. Cook in oven for 20 to 25 mins. Turn off oven and turn on broil, do each side of the ribs on broil for 10 mins. Serve with coleslaw or salad, potato salad and dinner rolls.

Crockpot Oatmeal

My mom always did this and I thought it was a great idea and made it this way for my kids as they were growing up too....

Oatmeal is my favorite breakfast meal. It keeps me feeling full for a long time and is a good day starter food. Adding fresh fruit to oatmeal makes it even better, but you can leave the fruit out if you aren't fond of it.

You will need:
approx. two cups of milk,
1/2 cup brown sugar, to taste
1 tablespoon of butter,
one pinch of salt, [can leave out]
1 teaspoon of cinnamon,
1 cup of quick oats,
chopped apples, raisins,
any other fruit [I use peaches]

Start by spraying the crock pot with Pam and put all the ingredients inside, mix, and turn the pot on low heat. Be sure to put it in the pot the night before, it cooks overnight. Stir it a little in the morning and Voila! Ready and perfect!

1/2 c. butter
1 c. sugar1 egg
2 c. Rice Krispies
1 c. chopped walnuts or pecans
1 pkg. (about 30) dates, finely chopped
1 pkg. coconut (enough to roll date ball in)

Melt butter in medium saucepan. Add sugar, eggs and dates. Cook 7 minutes, stirring constantly. Pour mixture over Rice Krispies. Stir in nuts. Form small balls and roll in coconut.

3 c. sugar
1 1/2 c. chopped dates
2 c. chopped pecans
1 sm. can evaporated milk
1 tbsp. butter
1 tsp. vanilla
Pinch of salt

Cook sugar and milk to soft ball stage. Do not let burn, but bring to a good boil. Add butter, vanilla and salt. Remove from heat and beat until mixture begins to thicken. Add nuts and roll up in a damp cloth until cool. Cut into 1/4 inch slices for serving.

Braided Pork Tenderloins

TIME: Prep: 30 min. + marinating Grill: 10 min.

Ingredients:
2 pork tenderloins (1 pound each)
1/2 cup mango nectar
1/4 cup plus 1 tablespoon spiced rum or additional mango nectar, divided
2 tablespoons olive oil
2 tablespoons Caribbean jerk seasoning, divided
2 garlic cloves, minced
1 cup chopped peeled mango
1 tablespoon heavy whipping cream

Directions:Cut tenderloins in half lengthwise; cut each half into three strips towithin 1-in. of one end. In a large resealable plastic bag, combine themango nectar, 1/4 cup rum, oil, 1 tablespoon jerk seasoning and garlic;add the pork. Seal bag and turn to coat; refrigerate for up to 4 hours. Drain and discard marinade. Place tenderloin halves on a clean cutting board and braid; secure loose ends with toothpicks. Sprinkle withremaining jerk seasoning.

Grill braids, covered, over medium heat for 8-10 minutes or until a meat thermometer reads 160°, turning once. Discard toothpicks. Let stand for 5 minutes before slicing.

Meanwhile, place the chopped mango, cream and remaining rum in a foodprocessor. Cover and process until smooth. Transfer to a small saucepan; heat through. Serve with pork.

Yield: 8 servings (3/4 cup sauce).
